Crispy cucumber salad
Welcome back to a fresh new year! The cold and snowy weather has me opting for warm and often heavy stews but to balance these flavors I prefer to serve some light and fresh as a side dish. This recipe will give you exactly that! It can also serve as a great dish on its own when the weather goes lighter.
I love cucumber! It is a very humble yet powerful vegetable and this little salad combines the crispy cucumber with the freshness of the lime juice and the depth from the soy sauce. If you combine it with the chili roasted sesame seeds, you have a great combination that is one of my favorite salads.
All you need for this fantastic combination is, half a cucumber, the juice from a lime, soy sauce, some olive oil and some chili roasted sesame seeds.
Thinly slice the cucumbers and mix with the other ingredients
Cucumber salad
Equipment
- Sharp knife
- Mandolin optional
Ingredients
- 1 Cucumber
- 1 tbsp Soy sauce
- 1 tbsp Olive oil extra virgin
- 1/2 – 1 Lime the juice
- Chili roasted sesame seeds to taste
Instructions
- Thinly slice the cucumber, either by using the Mandolin or a sharp knife
- Slice the lime in half and squeeze the juice from one half in to a bowl
- Add the soy sauce and olive oil and mix
- Put in the sliced cucumber and pour over the sesame seeds
- Taste the salad and add more lime juice or sesame seeds to taste
