Fresh carrot sticks with Lemon juice and Sesame seeds

It’s a new year and maybe time for a new you? Or at least you’re sick and tired of the heavy Holiday food that you’ve had for weeks and weeks and are in the mood something fresh and crunchy? Then this simple, zesty and flavor packed little dish is perfect to kick off the new year! It can be made in many different variations and is superb to match with this hummus recipe or this artichoke dip!

I first had a taste of these flavors when I was in Lebanon and was served the dish as a aperitif instead of a bread roll and thought it was a very clever way to start the meal a little lighter than with bread and butter. Don’t get me wrong I really enjoy the bread and cheese concept as well but everything has its’ time and place.

This recipe is very simple, all you need is:

  • Some carrots (I chose 3 medium size)
  • A lemon (both the zest and the juice)
  • Sesame seeds (regular white and chili roasted)
  • Olive oil (optional)

Start with peeling and cutting your carrots in to about 1 cm wide sticks and putting them in a bowl.

Peel the zest from the lemon and put aside for now

Cut the lemon in half

Squeeze the juice of half the lemon in to a bowl

Pour the sesame seeds in the same bowl and mix

Pour the mixed juice and sesame seeds over the carrots and top with about half of the lemon zest and mix it all together.

As I mentioned in the beginning, this recipe could be done in many different variations, for example, the lemon juice can be mixed with the olive oil or flavored with a few drops of sesame oil.

In this case I used Chili roasted sesame seed (which is DELICOUS) but any kind of sesame seeds can be used (both peeled and unpeeled).

If you don’t have fresh lemon, you can always use the bottled lemon juice or exchange it for Yuzu juice.

Equipment

  • Cutting board

  • Lemon zester optional

Ingredients
  

  • 3 medium Carrots
  • 1 Lemon zest and juice
  • 2 tbsp Sesame seed regular or chili roasted
  • 1 tbsp olive oil optional

Instructions
 

  • Peel the carrots and cut them into sticks (about 1cm wide). Put the sticks in a bowl
  • Peel the zest of the lemon and put the zest aside for now
  • Cut the lemon in two and use the juice from half
  • Squeeze the juice in to a bowl
  • Pour the sesame seeds in the to the same bowl and mix
  • Pour the mixed juice and sesame seeds over the carrots and top with about half of the lemon zest and mix it all together and
  • Enjoy!
